Ingredients
  • 1large onion
  • 2-3T olive oil(or coconut)
  • 1small cabbage(purple or green)
  • 3 apples(or more)
  • 1pound breakfast sausage(in bulk)
Instructions
  1. Cut the onions in half and then in long slices along the grain,
  2. Place onions in skillet with coconut oil and begin sauteing over medium heat.
  3. Meanwhile, prepare the cabbage. Remove any old outer leaves and slice off any of the stem that is brown. Then cut it in half and slice thinly across the grain, cutting the resulting cabbage slabs in half again. Cut the stem into thin slices, too.
  4. Add the cabbage to the skillet in batches and stir it in until combined. Let the cabbage soften a bit and stir every once in awhile.
  5. Create an opening in in the middle of the skillet and add the sausage, breaking it up into chunks with your spatula, stirring to combine with the onion and cabbage.
  6. Core and slice the apples into 3/4-1 inch chunks and add them, continuing to stir occasionally until everything is done.
