Ingredients
- 1 cup rolled oats (not quick; i prefer extra thick)
- 2-3 cups water
- 1-2 cups, packed nettles (fresh)
- 1/2 tsp sea salt
- 1 T butter, flax or coconut oil
- 1/4 cup berries or fruit (fresh and/or dry)
- 2-4 T nuts (your choice)

Instructions
- If you are going to soak your oats, place the oats in a bowl and pour 2 cups of water over them, leaving them to soak on the counter overnight. (This removes an anti-growth hormone called phytic acid, making the nutrients in the oats more accessible to your body.)
- In the morning, strip the nettle leaves from their stocks carefully so as not to get stung, and chop them finely until you have 1-2 cups packed. (Start with 1 cup packed if you're hesitant about this!)
- If you soaked the oats, add 1 cup of water to the pot. If you did not, add 2 cups of water. Add the salt and bring to to a simmer. Then add the nettles, simmering for a minute or two until they wilt.
- Add the (soaked) oats and water to the pot, stirring well to combine, and bring it all back to a simmer, cooking until the oats are the texture you like them. It might be anywhere from 3-10 minutes. Add more water as needed if the pot gets dry and you'd like the oats to soften up more.
- Serve warm with butter, coconut oil, or flax oil, berries, and nuts of your choice. On a warm morning, serve cold with a drizzle of flax oil and toppings.
