Peanut Butter Chocolate Nutballs!

  • 1/3cup almonds
  • 1/3cup sunflower seeds
  • 1T flax seeds
  • 1/3cup peanut butter
  • 6 medjool dates(pitted)
  • 1/4cup raisins
  • 1/3cup raw chocolate nibs(these are unsweetened)
  1. Place all ingredients into a food processor.
  2. Food process until the ingredients are well integrated—you can go longer if you want it smoother, or less if you like little chunks.
  3. If it looks crumbly, you can test it by squeezing some into a ball to see if you need to add more nut butter. If you do, add about 1 T at a time. OR If it is a little too wet, you can add more nuts/seeds to thicken.
  4. If you’d like it a bit sweeter, add more dates and/or raisins.
  5. Form into balls. You can store them in a closed container at room temperature for a few weeks, or pop into the fridge for very warm temperatures or longer storage.
Recipe Notes

It’s really important to use organic nuts and seeds since so many pesticides, et al are used to grow the non-organic ones! You can play around with this basic recipe, trying other nuts and nutbutters. You can substitute more nuts for the chocolate nibs. Without the chocolate, you can use only 2 T raisins…Enjoy exploring!!
