Zucchini Bread Breakfast Oats

Ingredients
  • 4small zucchinis(about 3.5-4 cups food-processed)
  • 2/3cup rolled oats (thick)
  • 1/2-3/4cup water(more if you soak your oats)
  • 2/3cup shredded cococut
  • 1/2tsp cinnamon
  • 1/8-1/4tsp nutmeg
  • 1/2tsp salt
  • 2-3T walnuts(or other nuts of choice)
  • 1T butter, flax or coconut oil
Instructions
  1. If you can, soak your oats overnight first. Place the oats in a bowl and cover them with water (1-2 inches over the top) and let them sit out overnight.
  2. In the morning, chop up your zucchini, and food process it until it is mushy with no chunks left. Add it to a saucepan.
  3. If necessary, strain the water from the oats and add them to the saucepan with the rest of the ingredients. Only add 1/2 cup of water if you soaked your oats; if you did not, add 3/4 of a cup.
  4. Simmer about 20 minutes, stirring occasionally, adding more water, and adjusting spices as needed until cooked!
  5. Top with nuts and your healthy fat of choice!
